Item Nutrición científica y patrimonio alimentario en Chile: contribuciones para un encuentro interdisciplinar en torno a las algas en el centro sur de Chile.(Universidad de Concepción., 2023) Aedo Bustos, Johanna Isabel; Carrasco Henríquez, NoeliaThis thesis develops descriptive research with a cross-sectional social research approach, which aims to characterize the uses of nutrition in the description and promotion of food heritage in Chile. Specifically, it delves into the case of algae, through the analysis of written and audiovisual records and testimonies from key actors. Food is a complex process that encompasses symbolic, cultural, economic and biological dimensions, among many others, which is why it is an object of study that requires an interdisciplinary perspective. In the cultural field, food heritage is considered within the intangible cultural heritage defined by UNESCO. At the same time, it has emerged as a form of inheritance from the past, and as a way to enhance an identity associated with original and rural. The actors involved in its definition may come from spheres of society related to the hegemonic institutional framework or to local communities and territories, both with different interests, which may cause tensions and negotiations in what is considered heritage. Algae have played an important part in the development of the culture of Chilean coastal communities, forming both an economic resource and a central food in their nutrition. Although there are several reasons why algae can be considered heritage, either as a form of memory, or as a tourist strategy, this thesis seeks to explain reasons related to Scientific Nutrition, due to the high nutritional quality that has been described of them. The information collected was subjected to a content analysis, which showed as a result that nutrition science has not participated in the conformation of the Chilean food heritage based on algae, however, it is frequently used as an argument both in the records analyzed and, in the interviews carried out, which is why the need for interdisciplinary approaches in research on food heritage is evident.
