Abstract
Este proyecto tiene como objetivo estandarizar el procesamiento de la botarga a partir de huevas de lisa utilizando sal, esto se realizó en el laboratorio de ingeniería de sistemas biológicos en la facultad ingeniería agrícola, con lo cual se quiere dar una solución al problema del desperdicio de las huevas de lisa en las caletas. Para esto fue necesario analizar los tiempos de salado y cantidad de sal a utilizar por gramo de gónadas. Lo que permitió identificar la importancia que representa el tiempo y la cantidad de sal a utilizar para poder obtener un producto parecido al comercial, finalmente los resultados obtenidos demostraron que con un tiempo de 6 días y utilizando 1,25 gramos de sal por cada gramo de gónada podemos obtener un producto aceptable.
The objective of this project is to standardize the processing of botarga from mullet roe using salt, this was carried out in the biological systems engineering laboratory at the agricultural engineering faculty, with which we want to provide a solution to the problem of waste of the roe of lisa in the coves. For this, it was necessary to analyze the salting times and amount of salt to be used per gram of gonads. Which allowed us to identify the importance of time and the amount of salt to use in order to obtain a product similar to the commercial one, finally the results obtained showed that with a time of 6 days and using 1.25 grams of salt for each gram of gonad we can obtain an acceptable product.
